Living on a boat for eight years, I made this dish often in my 40-quart cast iron Dutch oven in my BBQ, over a pit of hot coals. I make Julia Child's Coq au Vin recipe, and it is simply everything you want on a cold winter's night for dinner. The depth of flavor comes from hours of braising organic bone-in chicken thighs with carrots, onions, celery, garlic, tomatoes, potatoes, mushrooms, and fresh herbs in a rich broth of housemade chicken stock and red wine. Served with my homemade bread to sop up the sauce!
