Baked Potato Soup



We are huge Potato soup fans, so I decided to try the Weight Watchers Baked Potato Soup recipe. First, you cook your potatoes like you would if you were making baked potatoes…hence ‘Baked’ Potato soup. LOL. This was a bit strange for me considering the other potato soups I have made you boil the potatoes first. After the potatoes are baked Weight Watchers wants to you remove the skins, cut in to chunks and add to the garlic. Well, Pete & I like the skins so I left ½ of the skins on. The final product ended up looking like a big bowl of mashed potatoes and over all was very good. The WW recipe tells you to include chopped turkey bacon, fat-free sour cream, and fat-free shredded cheese, for a grand total of a 5 point bowl of soup. Not bad considering it’s got so much dairy and potatoes. It was excellent, we LOVED it! And it is even better the next day because the spiced have had time to soak into the potatoes. And 1 bowl will definitely fill you up. Again, this recipe asked for scallions, and I just opted out of using them. So I recommend this recipe to those who like baked potatoes.
